Pomegranate Splash!
Pomegranate Based Culinary Sauces  
                                         Blueberry Pomegranate Vinaigrette

This high anti-oxidant blueberry pomegranate vinaigrette opens the door to a lot creativity. This is where you get to play and create in the kitchen with a variety of salad ingredients as well as using it as a marinade for fish such as salmon as well as chicken.

Ingredients:
3 tbs        MarXana Brand Foods Blueberry Pomegranate Reduction Sauce
1 tbs        rice wine vinegar      
1/2 tsp     mustard (we prefer stone-ground mustard or smooth Dijon)
1/8 tsp     ginger juice fresh squeezed      
1/4 tsp     lemon juice fresh squeezed      
1 tbs        extra virgin olive oil

    1.     Place all ingredients except the extra virgin olive oil in a mixing bowl or blender. If using a blender turn on and off quickly just to combine. If using a bowl whisk the ingredients together until blended.
    2.     Once blended add the extra virgin olive oil and whisk the combined ingredients. If you are not going to use immediately we suggest not adding the extra virgin olive oil and refrigerate the mixture. Add the extra virgin olive and blend just before serving.
    3.     If you are using this as a marinade we would suggest placing the chilled chicken or fish in a baggie and then add the completed vinaigrette. Press out as much excess air as possible and do not refrigerate but allow to come to room temperature before cooking. Approximately 15 to 20 minutes.

Cooking Tips:
***If using as a salad dressing try adding any combination of the following for a tasty dish. Toasted walnuts, pumpkin seeds or pine nuts, use a mixed greens combination, add feta cheese or goat cheese, add fruit such as blueberries or pomegranate seeds. Be as creative as you want and enjoy.
